Loaded Seafood & Broccoli Baked Potato 🦐🥦

Ingredients:
2 large baking potatoes
1 tbsp olive oil
Salt and pepper, to taste
1 cup cooked shrimp, peeled and deveined
1 cup broccoli florets, steamed
1/2 cup cheddar cheese, shredded
2 tbsp sour cream (optional)
Chives, finely chopped for garnish
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C).
Prepare the Potatoes:
Wash the potatoes thoroughly and pat dry.
Prick the potatoes with a fork several times.
Rub the potatoes with olive oil and season with salt and pepper.
Place on a baking sheet and bake for about 45-60 minutes, or until tender.
Cook the Toppings:
While the potatoes cook, prepare the shrimp and steam the broccoli until just tender.
Season the shrimp with a pinch of salt and pepper.
Assemble the Loaded Potatoes:
Once the potatoes are done, make a slit in the top and fluff the inside with a fork.
Stuff with steamed broccoli and top with shrimp.
Sprinkle shredded cheddar over the top and return to the oven for a few minutes until the cheese is melted.
