Ingredients:

-1 onion, chopped

-2 cups beef broth

-Salt and pepper, to taste

For the Mashed Potatoes:
-3 large potatoes, peeled and cubed
-4 tablespoons butter
-1/4 cup milk
-Salt, to taste

Instructions:

Prep the Mashed Potatoes:
Boil the potatoes in salted water until tender, about 15 minutes. Drain well.
Mash the potatoes with butter and milk until smooth. Season with salt. Set aside.
Make the Filling:
In a large skillet, cook the ground beef and onion over medium heat until the meat is browned and the onions are translucent.
Add the carrots, peas, and corn, cooking for another 5-7 minutes until the vegetables are tender.
Sprinkle flour over the beef and vegetables, stirring to coat. Slowly pour in the beef broth, stirring continuously. Bring to a simmer and let the mixture thicken for about 5 minutes. Season with thyme, salt, and pepper.
Assemble the Pie:
Transfer the beef and vegetable mixture to a pie dish. Spread the mashed potatoes over the top, using a fork to create a decorative pattern if desired.

Preheat the oven to 400°F (200°C).
