Pork Ribs Recipe
Pork ribs are a delicious and flavourful dish that can be prepared in various ways, whether grilled, baked, or smoked. The key to great ribs is tender meat that falls off the bone and a rich, flavourful sauce or dry rub. Here’s a classic recipe for oven-baked pork ribs that are slow-cooked for maximum tenderness.
Ingredients
For the Ribs:
- 2 racks of baby back ribs or St. Louis-style ribs (about 3-4 lbs)
- 2 tbsp olive oil (optional, for rubbing the ribs)
- 1 tbsp apple cider vinegar (optional, for extra tenderness)
For the Dry Rub:
- 2 tbsp brown sugar
- 1 tbsp paprika (smoked or regular)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chilli powder
- 1 tsp ground black pepper
- 1 tsp salt
- ½ tsp cayenne pepper (optional, for heat)
For the Barbecue Sauce:
- 1 cup barbecue sauce (store-bought or homemade)
- 2 tbsp honey (optional, for extra sweetness)
- 1 tbsp apple cider vinegar or lemon juice (for tang)
Instructions
1. Prepare the Ribs:
- Remove the membrane: Flip the ribs over and locate the thin, white membrane on the bone side of the rack. Slide a knife under the membrane and pull it off with your hands or a paper towel. This will allow the seasonings and sauce to penetrate the meat better and ensure a more tender texture.
- Preheat the oven to 300°F (150°C).
2. Apply the Dry Rub:
- In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, chili powder, black pepper, salt, and cayenne (if using).
- Rub the ribs with olive oil (optional) and generously coat both sides of the ribs with the dry rub mixture, pressing it into the meat. For extra tenderness, sprinkle a bit of apple cider vinegar over the ribs before applying the rub.
3. Bake the Ribs:
- Wrap the ribs in foil: Place each rack of ribs on a large piece of aluminium foil, meat side up. Wrap them tightly in the foil to keep the moisture in.
- Place the wrapped ribs on a baking sheet and bake for 2.5 to 3 hours, depending on the thickness of the ribs, until the meat is tender and easily pulls away from the bones.
4. Prepare the Barbecue Sauce:
- While the ribs are baking, mix the barbecue sauce with honey and apple cider vinegar or lemon juice for a balance of sweetness and tang.
5. Finish the Ribs:
- After the ribs have finished cooking, remove them from the oven and carefully unwrap the foil.
- Brush the ribs with a generous layer of barbecue sauce on both sides.
- Broil or grill: If using the oven, set it to broil and place the ribs back in the oven, uncovered, for 5-7 minutes until the sauce is caramelised and sticky. If using a grill, place the ribs on the grill over medium heat for a few minutes per side, brushing with more sauce as needed.
6. Serve:
- Let the ribs rest for 5-10 minutes before slicing between the bones.
- Serve with extra barbecue sauce on the side, along with your favourite sides like coleslaw, baked beans, or cornbread.
