It features seasoned ground beef, ferried beans, corn, and salsa, all combined with tortillas or tortilla chips. Ingredients:
-1 lb (450g) ground beef
-1 onion, chopped
-2 cloves garlic, minced
-1 packet of taco seasoning
-1 cup water
-1 can (15 oz) black beans, drained and rinsed
-1 can (15 oz) corn, drained
-1 can (10 oz) diced tomatoes with green chilies
-2 cups tortilla chips, crushed
-1 cup shredded cheddar cheese
-1 cup shredded lettuce
-1/2 cup sour cream
-1/2 cup salsa
-1/2 cup sliced black olives (optional)
-1/2 cup sliced jalapeños (optional)
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 5 minutes.
Stir in the taco seasoning and water. Simmer for 5 minutes, until the mixture thickens slightly.
Add the black beans, corn, and diced tomatoes to the skillet. Stir to combine and heat through.
Spread the crushed tortilla chips evenly in the bottom of the prepared baking dish.
Pour the beef mixture over the tortilla chips, spreading it out evenly.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
Top with shredded lettuce, sour cream, salsa, and optional black olives and jalapeños.
